The Montgomery couple are on fire for the new Hellcat Coffee


Ignacio and Candice Peña are overflowing with excitement about their Hellcat Coffee Co.

The Montgomery couple are launching their new cafe and brand of coffee that will reside between Conroe and Montgomery. The location is at 12922 Texas 105 west of the San Jacinto River Bridge. Hellcat Coffee is slated to open in early February.

At the start of the pandemic, Ignacio was fired from his job as a welder. Candice has been a wife and stay-at-home mom who has always been there to support Ignacio. He was able to land a work contract to help the family make ends meet, but for this dynamic couple, the layoff marked a new start and a chance for them to start a business together.

“We had traveled to other parts of the state and saw a lot of independent cafes. We noticed that we weren’t seeing a lot of them in the Montgomery area, so an opportunity arose and we took it, ”he said.

They started the brand by researching and experimenting with their own coffee blends.

This resulted in four custom blends, including “Fog Annihilator,” a dark blend native to Costa Rica, Ethiopia and Honduras. This mixture has notes of chocolate and dried apricot. “Afterlife” is a medium dark blend with beans from Guatemala, Mexico, Colombia and Honduras with hints of chocolate, toasted nuts and ripe berries.

“Unforgiven” is a medium roast with Mexican beans and hints of tangerine and milk chocolate. “Atomic Blonde” is a medium light roast with Ethiopian beans and hints of blueberry, lemon, plum and fruit jam.

“These are bold tastes that you don’t get every day,” he said.

As fun as they got to experiment and create the blends, they wanted to add creativity to the names of the cafes with names like “Afterlife” and “Atomic Blonde” that really typified the boldness of the flavors.

“We really wanted names that would grab your attention,” Ignacio said.

The next step is to open their cafe on Texas 105.

They chose a location near the end of a mall where the Bistro Italiano and Mr. Taco & Tequila Bar are located. Candice said the flow of traffic along Texas 105 makes it a great location.

It was a paved place at first, but they quickly added a 12 by 30 building and built themselves over a patio and awning. They plan to offer drive-thru and seating on an outdoor patio.

In addition to offering their special blended coffees, they plan to offer nitro infused coffees, energy drinks, Italian sodas, smoothies and more.

“We’ve all been through so much these past few years, it’s our way of giving back and having a positive attitude that will make someone smile,” said Ignacio.
