The story of the chocolate maestro begins in New York, where he spent several years in the kitchen of Daniel Boulud, before working in Le Pré Catelan three Michelin stars and La Table du Baltimore in Paris. Chef Robledo also ran Barry Callebaut’s Chocolate Academy Center in Mexico City and has spent many years traveling the world, sharing his knowledge of chocolate and baking.
