The affable cocktail bar, located at The Rocks, came in at No. 22 in the authoritative rankings last year, making it Australia’s top-rated bar and cementing its grip on the growing cocktail scene. city experiment. The rapid dominance of the Maybe Sammy team led to several spin-off bars, including personal favorite Dean & Nancy, as well as various takeovers like this one at the Sydney Seaplanes terminal, Empire Lounge.
Every Sunday from now until April 24, the Rose Bay waterfront bar will transform into a dedicated Aperol Spritz hub run by the team at Maybe Sammy. Alongside high-end dishes like unagi bites and lobster rolls with caviar from chef Faheem Noor. And because Empire Lounge is Sydney’s seaplane terminal, guests will be able to take daytime scenic flights at a discounted rate of $180 per person.
Boarding is a simple matter of descending a ramp and boarding the seaplane for a 15-minute tour of Sydney’s top attractions, including Bondi Beach and the Sydney Harbor Bridge.
If the weather in Sydney starts to make up its mind, this could easily be Sunday’s best session. Maybe Sammy’s Casa Aperol, of course, has the perfect aperol spritz, but also has an extensive menu of other signature cocktails, some created exclusively for the pop-up like the Water Plane with aperol, bourbon, averna and lemon and the East 8 Hold Up with aperol, vodka, passion fruit, pineapple juice, prosseco and mint.
Each Sunday session will also feature a raffle, with the prize being a free flight for 2 with Sydney Seaplanes. It’s not every day that Australia’s top mixologists await you on either side of a speedy scenic flight over the harbour.
Casa Aperol will have its own flight desk for anyone wishing to book a Sydney Seaplanes flight the same day, but it’s probably a better idea to register in advance. The event only lasts 2 weeks and flights at the start of the day are already filling up quickly.
