Sushi by Bou Set will open on January 21

Simple Venue has announced that Sushi by Bou at Hotel Lincoln will open on Friday, January 21, 2022. The omakase speakeasy sushi experience is now coming to Chicago. The lounge is the sister restaurant to the Sushi Suite 202 concept, which opened in 2019 at the Lincoln Hotel, and Sushi Boutique which opened in October 2021 at the Claridge House hotel on the Gold Coast.

Sushi by Bou offers a timed omakase experience (30 minutes/12 pieces/50$ pp or 60 minutes/17 pieces/100$ pp) where the choice of sushi is entirely left to the chef. The Sushi by Bou menu features fresh fish, both locally sourced and imported from around the world. Sushi chefs serve customers directly, guiding them through the meal, providing a personalized experience.

the Sushi by Bou omakase regularly offers selections including:

  • hamachi (amberjack)
  • Botan Ebi(spot prawn)
  • Ikura (salmon eggs)
  • Hotate(shell)
  • O-Toro (fatty tuna)
  • Unagi (barbecue eel);
  • and their signature Wagyuni (“earth and earth”).

Hand rolls can be made upon request from any of the various sushi cuts and additional a la carte cuts can also be ordered. Meals can end with a bite of mochi ice cream.

Sushi by Bou’s cuisine is complemented by Japanese beers as well as imported sake and a selection of whiskeys in their whiskey library. Sushi by Bou’s craft cocktails use market-fresh ingredients. Among them, guests can savor:

  • Nip in the egg (Japanese whiskey, sweet vermouth, ginger liqueur, Cocchi Americano, lemon zest)
  • summer campfire (Bourbon whisky, Islay scotch whisky, yuzu juice, 4-spice honey syrup, ginger beer, spring mint)
  • Never too sweet(Bourbon whiskey, dry curaçao, chilli and sage bitters, rosemary, smoked thyme)
  • First time(tequila blanco, grapefruit liqueur, grapefruit juice, lime juice)
  • and Southern Shiso(Suntory haku vodka, shiso leaves, simple syrup, lime juice).

In addition to specialty cocktails, Sushi by Bou will offer approximately 40 whiskey options, as well as whiskey and sake flight options.

Sushi by Bou will be open for dinner on Sunday, Wednesday and Thursday from 6 p.m. to 10 p.m. Friday and Saturday are from 6 p.m. to 11 p.m. The last service is 45 minutes before closing and reservations can be made on sushibybou.com or Opentable. No take-out or delivery available.
